Red Velvet Heart Pancakes

These are not your ordinary pancakes. I was catching up on my cooking blogs and came across red velvet week (genius idea) and thought I should take a shot at making these. I’ve heard a lot of talk about red velvet pancakes, seen them pop on a few menus, and I figured I should be on trend with this one. What screams I love you more than a decadent red velvet heart shaped pancake?

This was my twist on a recipe I found at Cafe Zupas. Follow the directions below and simply use a heart cookie cutter spritzed with cooking spray before starting. Place the cookie cutter on the pan and pour your ⅓ mixture into it! You will have the cutest pancake ever, and they taste like red velvet cupcakes married a cookie. If you choose to share these, be it with a friend, your love, or your family, they will be swooning.

Red Velvet Heart Pancakes:

(Adapted from Cafe Zupas)

1 cup flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

3 tablespoons sugar

2 tablespoons unsweetened cocoa powder

1 large egg

¾ cup buttermilk

¼ cup sour cream (creme fraiche would be a delicious substitute!)

2 tsp red food coloring (the more coloring the deeper the red hue)

2 tsp vanilla extract

In one bowl combine the dry ingredients. In a separate bowl whisk the wet ingredients together. Add the wet ingredients to the dry and mix until just combined.

Heat pan on med/high griddle that is lightly buttered. Place cookie cutter on the griddle and pour ⅓ mixture into it. Lightly brown on each side.

Top if off with butter or mascarpone and just a touch of maple syrup!

    I am wondering with all the food coloring, did it alter the taste? I just had red velevet twice in the last week – the first was gross and made me thing I didn’t like red velvet. However, last night I had it again and it was fantastic! Cute idea for a pancake. My husband usually does the pancakes, but this might be a fun surprise! [TF]

      Yeah I was concerned about the food coloring affecting the taste too, but def. needs it for color. I think the cocoa powder and buttermilk make up for it in taste, because it is really good. *Quick tip: Whole Foods has food coloring that is all natural, so its made with beets! Would be interesting to try that.

        I was talking with a friend who has used that food coloring in red and said that even that required a lot of it, but it probably wouldn’t taste like chemicals! :) [TF]
